Wholesome Winter Loaf

During winter we bake our very own honey, fruit and oat loaf - otherwise known as our Wholesome Winter Loaf.

Filled with the natural goodness of rolled oats, bran, honey and a mix of sultanas, currents, apricots and walnuts - it is also egg / gluten free. All in all a really healthy energy boost to kick-start a cold winter's morning. It's delicious toasted with butter - or go to the next level and add some sliced banana - it will keep you going until lunchtime!

Preheat oven to 200°C (180°C fan-forced). You will need a greased tin around 98mm deep by 100mm wide and 165mm. This recipe makes one loaf.

INGREDIENTS:

Group one

  • 125g wholemeal self raising flour
  • 30g bran
  • 10g baking powder
  • 100g rolled oats
  • 30g honey

Group two

  • 300 ml milk

Group three

  • 60g sultanas
  • 40g currents
  • 30g walnuts
  • 80g ready chopped apricots

METHOD:

Blend group one together in mixing bowl. Add group two and mix up to a batter - then add group three and mix until combined. Deposit into greased tin and bake for approx. 40 minutes, time may vary depending on oven.

Remove from tin, tap and listen for a hollow sound - and your healthly loaf is cooked. Especially delicious served toasted with
butter. Enjoy!
